A fragrant Thai green curry with vegetables and tofu, ready in 30 minutes.
🥘 Ingredients

baby corn (halved lengthways)100 g

bamboo shoots (drained)100 g

coconut milk400 ml

coconut oil1 tbsp

firm tofu (cubed)200 g

fish sauce1 tbsp

green curry paste3 tbsp

jasmine rice

palm sugar1 tsp

red bell pepper (sliced)1

vegetable stock100 ml
🍳 Cookware
- large wok

1Heat coconut oil in a large wok over high heat.coconut oil: 1 tbsp

2Add green curry paste and stir-fry for ⏱️ 1 minute until fragrant.green curry paste: 3 tbsp

3Pour in the coconut milk and vegetable stock , bring to a gentle boil.coconut milk: 400 ml, vegetable stock: 100 ml

4Add the firm tofu and bamboo shoots to the pan.firm tofu: 200 g (cubed), bamboo shoots: 100 g (drained)

5Add the red bell pepper and baby corn . Simmer for ⏱️ 8 minutes .red bell pepper: 1 (sliced), baby corn: 100 g (halved lengthways)

6Season with fish sauce , palm sugar , and lime .fish sauce: 1 tbsp, palm sugar: 1 tsp, lime: 1 (juiced)
