A fragrant Thai green curry with vegetables and tofu, ready in 30 minutes.

🥘 Ingredients

  • baby corn (halved lengthways)
    100 g
  • bamboo shoots (drained)
    100 g
  • coconut milk
    400 ml
  • coconut oil
    1 tbsp
  • firm tofu (cubed)
    200 g
  • fish sauce
    1 tbsp
  • fresh coriander
    handful
  • green curry paste
    3 tbsp
  • jasmine rice
  • lime (juiced)
    1
  • palm sugar
    1 tsp
  • red bell pepper (sliced)
    1
  • thai basil
    handful
  • vegetable stock
    100 ml

🍳 Cookware

  • large wok

    Heat coconut oil in a large wok over high heat.

    Add green curry paste and stir-fry for ⏱️ 1 minute until fragrant.

    Pour in the coconut milk and vegetable stock , bring to a gentle boil.

    Add the firm tofu and bamboo shoots to the pan.

    Add the red bell pepper and baby corn . Simmer for ⏱️ 8 minutes .

    Season with fish sauce , palm sugar , and lime .

    Stir in thai basil and fresh coriander just before serving.
